  1. Ingredients:
    • 2 tbsp Massaman curry paste
    • 400ml coconut milk
    • 300g chicken or beef (cut into chunks)
    • 2 potatoes (peeled and cubed)
    • 1 onion (sliced)
    • 1/4 cup roasted peanuts
    • 1 cinnamon stick
    • 2 cardamom pods
    • 1 tbsp fish sauce
    • 1 tbsp tamarind paste
    • 1-2 tbsp palm sugar (or brown sugar)
    • 1 cup water or chicken stock

    • Heat 1/2 cup coconut milk in a pan over medium heat until it thickens. Add Massaman curry paste and stir-fry until fragrant.
    • Add the meat and cook until lightly browned.
    • Pour in the remaining coconut milk and water/stock. Add cinnamon stick, cardamom pods, and peanuts.
    • Stir in potatoes and onions. Simmer until meat is tender and potatoes are cooked.
    • Season with fish sauce, tamarind paste, and sugar. Adjust to taste for a balance of sweet, sour, and savory flavors.
    • Simmer for a few more minutes until the curry thickens slightly.

Serve hot with steamed jasmine rice for a rich and aromatic meal that combines sweet, spicy, and nutty flavors!
