Massaman Curry Recipe

- Ingredients:
- 2 tbsp Massaman curry paste
- 400ml coconut milk
- 300g chicken or beef (cut into chunks)
- 2 potatoes (peeled and cubed)
- 1 onion (sliced)
- 1/4 cup roasted peanuts
- 1 cinnamon stick
- 2 cardamom pods
- 1 tbsp fish sauce
- 1 tbsp tamarind paste
- 1-2 tbsp palm sugar (or brown sugar)
- 1 cup water or chicken stock
- Instructions:
- Heat 1/2 cup coconut milk in a pan over medium heat until it thickens. Add Massaman curry paste and stir-fry until fragrant.
- Add the meat and cook until lightly browned.
- Pour in the remaining coconut milk and water/stock. Add cinnamon stick, cardamom pods, and peanuts.
- Stir in potatoes and onions. Simmer until meat is tender and potatoes are cooked.
- Season with fish sauce, tamarind paste, and sugar. Adjust to taste for a balance of sweet, sour, and savory flavors.
- Simmer for a few more minutes until the curry thickens slightly.
Serve hot with steamed jasmine rice for a rich and aromatic meal that combines sweet, spicy, and nutty flavors!
