Ingredients (Serves 2):

  • 2 cups cooked white rice
  • 100g beef (thinly sliced)
  • 1 small zucchini (julienned)
  • 1 small carrot (julienned)
  • 100g spinach (blanched and squeezed)
  • 100g bean sprouts (blanched)
  • 2 eggs
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 teaspoon sesame oil
  • 1 clove garlic (minced)
  • Soy sauce, salt, and sesame seeds (to taste)

Instructions:

  1. Prepare Vegetables:
    • Sauté zucchini and carrot separately in a lightly oiled pan, seasoning with a pinch of salt.
    • Toss blanched spinach with 1/2 teaspoon sesame oil, minced garlic, and a pinch of salt.
    • Season blanched bean sprouts with a dash of salt and sesame seeds.
  2. Cook Beef:
    • Marinate beef in 1 teaspoon soy sauce, 1/2 teaspoon sugar, and minced garlic for 10 minutes. Stir-fry until cooked.
  3. Fry Eggs:
    • Fry eggs sunny-side-up.
  4. Assemble:
    • Place warm rice in bowls. Arrange beef, vegetables, and egg on top in sections.
    • Add a dollop of gochujang in the center.
  5. Serve:
    • Drizzle with sesame oil and mix everything thoroughly before eating. Adjust spice levels with more gochujang if desired. Enjoy!
